Year in Review 2019

Fruit cookie pizza for my birthday 2019
Birthday Fruit Cookie Pizza

Looking back over the year, I have to ask myself has it been a success? I like the idea I picked up from the Navy about After Action Reports. What went well, what went bad and what can I do better for next year.

What went well.

I believe my relationship with Amanda is improving. I am trying to be a better communicator, I am trying to help out more around the house. And I am trying to be at home more during the critical times of the day to help her out. I will try harder to be there more this coming year.

I started working for a company that is giving me more hope for the future than any job I have had for a long time. Working for REDLIST is not easy and I am not having the influence I would like. However, things are moving forward and I have lots of opportunities to improve and learn more. I hope to learn how to be a better communicator this year at work too.

Roman has zeroed in on becoming a pilot and that is giving him something to work for. He is working for a company that is giving him an opportunity to stretch his abilities and travel. I am hoping we can figure out a better way to pay for Roman’s pilot training.

Paige is moving forward on her schooling. She took the opportunity to go to Taiwan to get better at Chinese. She is finishing up at SLCC and will be probably finding a new college this year. I also hope I can figure out a better way to support her.

Emerson is doing well in school and getting better at golf. I want to find a better way to support him in his pursuits. This upcoming year

I am also trying to get my kids to be more entrepreneurial.

I also kept away from anything negative, because that is a black hole of influence I am trying to avoid.

Freezer Jam for Christmas and the lies we were told.

Freezer Jam Christmas 2019

For at least the last 15 years I have made freezer jam. Most often I have made strawberry and about half as much raspberry.

The ingredient that makes all of the magic happen is pectin. Recently I discovered that pectin is a naturally occurring substance in most fruit and most of the pectin we use for jam comes from citrus. for some time I believed it was similar to what was used in Jello, but I was wrong.

One of my discoveries this year is that I can make more than one batch of jam at a time. I have been buying pectin in 1.75-gram packets and all of these packets come with instructions; these instructions say only do one batch at a time. Lies!! This year I bought ten pounds of pectin. That is equivalent to about 90 of those packets. I was hoping some of my neighbors would help me cover the cost and split the bulk. Sadly, no one has volunteered any desire for pectin.

So this has gotten me in a bind because pectin doesn’t last forever.

Because I like it so much I thought I would get into the spirit of Christmas and make some batches and give them away.

Because I have so much I wanted to save some time and experiment with making more than one batch. I first tried two packets from the store. And what do you know, they worked out fine.

My mother-in-law has made jam a couple of times over the last decade and hers never seems to set up properly. I have had problems too in the past and I suspect there are two areas where people might have problems:

The first is not putting enough sugar in the recipe. There is a lot of sugar in these jams, and probably the reason everyone likes them so much. I have never had more than a fleeting temptation to put in less sugar. So, I can see how the ascetics in the population, in an attempt to limit their sinful indulgence in sugar, would want to lessen the guilt by lessening the evil ingredient.

The second I believe is not cooking the pectin long enough. To really get the pectin to set properly it needs to come to a roiling boil and stay at that rolling boil for a full sixty seconds. This is where I have had problems in the past because I would start the 60-second count too early and the result would be more strawberry syrup than strawberry jam. Even if it’s thinner the result is still really tasty and I have never thrown out a failure.

A third reason may be because the pectin is too old. According to Karen Blakeslee from K-State as pectin gets older it is less effective.

Back to the five batch experiments. That’s right I attempted five batches at once. You have to realize this was 6 pounds of strawberries and almost 9 pounds of sugar. All mixed together it was over two gallons of jam. The six pounds of strawberries is a standard bag of Costco frozen strawberries. That is another lie I am debunking here, frozen fruit works just as good and no one, even the supertasters can tell the difference.

So if you think you are going into production mode use frozen fruit and remember you can do multiple batches at once.

I would also make sure that the pan you use for pectin is 1/3 full with water and 2/3s to the top. The pan I used for the five-batch-in-one pectin was barely big enough when the pectin started to boil and I had to pull it off of the heat a couple of times to keep a minimum from spilling out onto the burner. I was concerned about this especially after 20 minutes and the jam didn’t seem to be setting up. Many times when only doing one batch the jam would start to set before I could even get the jam poured. So it was concerning to me when the jam wasn’t setting up after 30 minutes. Fortunately, the next morning the jam had set up nicely. I have had batches that were harder than this batch but not by much.

Part of the reason I am writing all of this down is to make notes as an After Action Report for the next time I do a batch of jam. I have recently heard they do this in the military.

Can’t Hurt Me – David Goggins

Audio Version of Can't Hurt me.
Check out the audible version of Can’t Hurt Me

Last week I was at the gym and Jack Johnson gave me a tip on a book to read. This is a cool guy named Jack Johnson, not the singer/songwriter named Jack Johnson.

The book was Can’t Hurt Me by David Goggins. I am going to recommend the audiobook because there are some things in there that are not in the physical book.

I am mostly an audiobook guy now because of the 1 to 1.5 hours of commute I have each day.

Anyway, He has done some amazing things in his life and reading this book helps inspire me to find some of my own amazing things to do. Over the next couple of weeks, I am going to writing down and keep track of the challenges in this book. I found a summary of the challenges at a blog WhatDisciplineMeans I will follow along from there.

Testimony 2019

December 19, 2019 by D. Gardner Leave a Comment

During this time of year, the world turns toward Jesus Christ and celebrates his birth. Reading the Come Follow Me curriculum this week it challenges readers to write down their feelings about Jesus Christ as the Savior of the world.

My first impression is that I feel like my testimony and faith are weaker than they have been in the past. However, I do thrive on the hope that Jesus Christ helps me to overcome the wrongs I have done in my life.

Throughout my life, I have peace, joy, and tranquility by following the commandments he has given to the world through his teachings from the prophets.

I have found happiness in following the Savior and I believe that happiness is the goal of this existence. When I say happiness it encompasses all of the ideas embodied in happiness, joy, peace, tranquility, and I would include love in that group. However, I also believe more words could be included in the definition of happiness.

I find it interesting that so many other philosophies come to the conclusion that happiness is what everyone seeks and this really is essentially the goal for everyone.

I believe that following Jesus will bring that happiness everyone seeks. I believe this because I have felt happiness through my feeble attempts to follow him. I watch, ready and study other people and what they are trying to do to bring happiness to their lives. This helps build my testimony that following the teachings of Jesus Christ will bring happiness.

One of the biggest things that many of these other philosophies point out is that helping others, caring for others and sacrificing for others is one of the best ways to bring happiness. I know this is a main focus of the gospel of Jesus Christ.

I would say to all people. Seek happiness, because I believe this is the goal everyone already has. I also believe that everyone should experiment by following the teachings of Jesus Christ to see how these philosophies can bring happiness to our lives.

I also acknowledge one of the great things about life is we have the freedom to experiment with any philosophy. If you feel you need to explore something you believe will bring you happiness, study it out. See if others have tried the path you want to try and see what their outcomes have been. If their outcomes are not what you want, check out other philosophies. Maybe you will call me lazy, but it seems to me that following the teachings and commandments seem to be a safe way to happiness.

Measure What Matters

December 13, 2019 by D. Gardner Leave a Comment

by John Doerr

OKRs – Objectives and Key Results – This is the framework the book sets out. I have the set up against personal Revelation. How can these things work together and are there things where they conflict.

I like that Doerr knows about Fredrick Taylor and Henry Ford. And gives a Nod to their Ideas. They both portray the ideals of productivity and continuous improvement. It is interesting that Doerr believes Peter Drucker uses a wrecking ball to their theories. However, I think Drucker just gives another perspective. And I do agree with Drucker and Doerr that Taylor gave too much credit to the expert for improving the process.

I have found throughout my career it is the people doing the work that have the best ideas and can experiment the most with a process and not the person/guru that is watching the process.

I will have more insights as I progress through this book.
